You can get merten & storck for a better price if you watch for it.

Neither is de buyer, or matfer quality tho, but also not as expensive.

I use M&S for camping (lighter).
..I have way too many pans.

I have a 10" Merten & Storck and it's a good pan for the money. It's lighter than more expensive pans because only the flat base is 3mm whereas the sides are 1.2mm. It also doesn't have a non-riveted handle which has it's pros and cons. The pros with a non-riveted handle is that it creates a completely flat surface on the cooking side, which makes clean up easier. However, riveted handles are stronger and less likely to break off.

With that said, I paid $23 for my Merten & Storck back in 2022, but I've noticed the prices have gone up over the last couple years. I'm unsure if that is due to the brand getting better name recognition or due to tariffs/inflation. But for $35, you would be pretty hard pressed to find a better pan. If you don't mind seasoning the pan yourself, you can check out American Metalcraft pans for the same money--these are commercial grade pans meant for restaurants.

The only caveat I will mention is that if you're new to carbon steel, you need to lookup some YouTube videos on how to maintain them so they don't rust. Also, do not ever pour cold water into the pan when it's hot as that will likely warp it and don't pre-heat the pan on high. Start at medium or even medium-low and wait 3-5 minutes and then adjust accordingly based on the type of range you have. If you find your food is still sticking, then you are likely either not letting the protein cook long enough or you're using too much heat. That was my initial problem when cooking eggs on it.

For me, the coupon is on the 8inch and not the 10. This is definitely MS. And, the 8 inch is cheaper through MS right now. I will say that I own a lot of cast-iron and carbon steel, and I default back to the MS pans most of the time. Follow the care advice above.

I've used two Merten and Storck pans for over two years and they are my favorite carbon steel. I sold my de Buyer in favor of this. Highly recommend.
