Uncut is way cheaper. You're paying for convenience. I hate rolls cause they curl up
also a lot of waste in rolls, you always measure out more than you need by an inch or two, plus as you say the rolls curls and the end of the roll if often not enough on a large cookie sheet.
This is one of those situations where the convenience and time you save is worth any extra cost at this price. Plus if you're making multiple trays of cookies or brownies at once, so much easier to spread out on a table and lay out the premeasured dough on a premeasured sheet.

but personally high heat & direct food contact is a combo where I don't go with no names.
Product description includes the claim it is using "vegetable silicone oil" ...which per my quick googling is a term used by cosmetic companies and is not tested to be food safe. You'd want actual food grade silicone oil.
Do your own quick search before buying. To each their own on what is and isn't a significant health concern.
