I never had pumpkin spice coffee, couldn't I just use black coffee and pumpkin pie spice powder or would it need other ingredients?

Expiration dates on K-Cups is not a true indication of a degrade in quality. They are nitrogen-flushed and sealed. These will last almost indefinitely.
