These don't do anything more than three year-old MacBooks do

Honestly the M3 and up MacBooks are the way to go. I wouldn't go below that since the M2 is limited with external monitor displays.

I can see the MacBook Air 13" M4 16/256 will go back down to the $799 price again. That to me is the best deal for price/performance new. While the M5 is great and Apple bumped the SSD to 512gb, but $1100 isn't worth it. Used value of the M1/M2/M3 are holding up but the 8gb RAM of those machine are a turn off. If you can get a used M4 for $600-$650 is the sweet spot going used.
The rumored $599 Air IMO is too much of sacrifice. Just get a used M-series machine then.

All depends on how much you want to spend. I wouldn't recommend anything below M4 because of RAM. Almost all M1/M2/M3 are 8gb especially in the used market. My rule of thumb for used MacBook Air 13" that I would not recommend spending more.M1 = $250, M2 =$400, M3 =$550,M4 = $700,Most user including myself will never if maybe use one external display. The RAM and storage is more important.

Yah the M4 having a base of 16GB of ram is a big plus!
