I have a portable 1800W induction cooktop (Insignia NS-IC1ZBK0), and it takes 20 minutes to heat oil to 380°F. I find it hard to believe that this 1400W model can reach 500°F.

I have a portable induction cooktop. Even when not using the highest setting, my empty carbon steel wok will still reach 500F. I don't think they're talking about reaching 500F for a pot full of oil.

I'd hope no one is getting oil that hot. Your house would be full of smoke and you'd instantly burn damn near anything you put in it.
