I'm curious about the ceramic nonstick coating in this. Does it chip away easily and what new chemical is it going to release into the food?

I was looking at the hexclad ones and wonder how they compare to the Misen.

From what I've read on Reddit, Hexclad are junk. First time I'm hearing about Misen, so more research is needed, but most lean towards the stainless steel.

Misen is the only company that uses a carbon steel coating. So it will for sure last a lifetime, as carbon steel really isn't that new. Hexclad look great, if you buy them though make sure to only get them from hexclad directly. The issue with hexclad is they had pfas for a long time and only recently removed them. So I've read a lot about people buying them on sale and getting the old ones, which still have pfas

If you watch Alton brown he talks about the science of the misen. He just never says the name as he doesn't advertise brands. That's not to say the ones misen make will be misen only forever, just as of right now they're the only one with a carbon steel polymer I've read the new hexclad are pretty good. However harder to get unless direct Misen takes a bit of work, but they start non stick and then get better over time. Though to be honest I accidentally lit the pan on fire from grease on it, and that's what made mine super non stick. Just let it burn baby

We upgraded our old worn-out Teflon pots and pans recently to a Costco clearance GreenPan ceramic set and I got a Misen for christmas.


1. These ceramic non-stick as I understand it essentially release a small amount of silicone oil (which is food safe, it's used in food manufacturing all the time). It also means the coating wears out after 3-5 years.

2. The Misen is nitrided carbon steel. Effectively think of it as pre-seasoned unltra smooth cast iron. The nitriding means it won't rust. It's not a new tech, japan has made nitrided pans for a long time. It will still take more seasoning over time and become even more nonstick.


I did get the Misen over christmas and cooked an egg on it (with a small amount of butter) and it wasn't teflon pan nonstick, but after jiggling the pan the egg started moving pretty quickly with no intervention from a spatula.

I got a 10" Misen. Small enough for cooking things like eggs, large enough to cook some larger things.

...and weighs 50 pounds, isn't really nonstick even after extensive seasoning, and require much more careful maintaining and cleaning that nonsticks. If I want to quickly cook up a couple eggs for breakfast, I'm using my nonstick over my cast iron 10/10 times. Of course cast iron pans will last forever, and are great for cooking a lot of things, but that doesn't make nonstick pans not very useful. You can have more than one pan in your kitchen.
