1. These ceramic non-stick as I understand it essentially release a small amount of silicone oil (which is food safe, it's used in food manufacturing all the time). It also means the coating wears out after 3-5 years.
2. The Misen is nitrided carbon steel. Effectively think of it as pre-seasoned unltra smooth cast iron. The nitriding means it won't rust. It's not a new tech, japan has made nitrided pans for a long time. It will still take more seasoning over time and become even more nonstick.
I did get the Misen over christmas and cooked an egg on it (with a small amount of butter) and it wasn't teflon pan nonstick, but after jiggling the pan the egg started moving pretty quickly with no intervention from a spatula.
I got a 10" Misen. Small enough for cooking things like eggs, large enough to cook some larger things.
