Could I put my cell phone Sim in this device then connect the phone to the wifi for unlimited and undetectable tethering?
Yes and no.
Yes because you can change TTL which is how most carriers detect hotspot usage.
No because there's no such thing as unlimited. Carriers will throttle you if you have crazy none hotspot usage.
Im going to guess no. These things normally require a data only sim which very few, if any providers allow unlimited unless you are public safety.
I run about 35 of these routers. They work perfectly fine with regular sim cards, they detect the phone number and can send/receive SMS from the router interface.

How did you find the correct settings for each provider? I've found the online groups that discuss this are less than helpful unless you buy their custom router/modem setup.
Also have you ever experienced being throttled to unusable speeds on unlimited plans like the T-Mobile business tablet plan?
you can just use a low end phone, USB to Ethernet w/ PD power, a router that can change TTL to 65
my Cable-Matters hub seems has compatible problem for Moto and Oneplus but not Samsung, Anker works fine for all.
works w/ hotspot plans or no hotspot but phone allows a dummy hotspot, for Metro you can google APN trick to enable hotspot anyway on Android only(this doesn't need TTL 65, works w/ the phone alone if doesn't need good WiFi)

All traffic shows tablet data.
I also run Nord VPN on it.
