Why these brands are so cheap? Are they safe to use?

The technology of wireless car play or Android Auto is not anymore new combine that with mediocre way of connecting it to your phone that might work or not, you get this cheap device.

And I don't see them being more harmful in such way your phone Bluetooth connects to other devices.

for $10 worth a try. Not that plugging a cord in is a big deal but less hassle and clutter

I currently have a miniature size carplay adapter that I bought from Aliexpress for $8, I was skeptical of the price but out of the 3 I tried it was the least clumsy and most stable.

Yes they are safe in the sense that there is no way it could steal your data or mess with phone or car stereo.

The adapters that use Bluetooth and WiFi simultaneously don't work on my 2025 Volvo XC90. Simultaneous Bluetoorh and Carplay are NOT allowed by Volvo's Infotainment System, even if it's an external adapter.
There are some Carplay adapters the have dual wifi channels plus Bluetooth. You turn-off internal Carplay and use Bluetooth to set up the external adapter the switch off Bluetooth and the adapter does everything over the two wifi channel connections.

You get what you pay for with these. Expect random drop outs, sporadic failure to connect on start up in the first place, etc.
