not certain, but typically it is for 20 or 25 gallons. At least that's how other rewards discount programs operate. You may try google to pin down an answer for the 7 -11 T&C.

in the app, go to fuel, select the gas station (which shows the credit), select the i (information) icon and you will the expiry date for each. This is what I see for my profile (Code - Expiry)

The Speedway "fuel lock" is 25 gallons, so maybe this is the same?
