Good price, though I think the 7500x3d for $300 was a better deal considering they're very close. Plus the 7500x3d comes with a microatx board, which I think fits the 7500x3d/7600x3d better. Low tdp, small case, great ps5 pro adjacent PC.

I went with a lian li dan, but microcenter also has an exclusive $60 lian li case that's fairly small, looks relatively nice (if a little boring), and will comfortably fit a 2 fan GPU (ie a 9060xt)

I wish microcenter had bundles for ITX builds. Does it make sense to just buy it for the ram/cpu and ditch the motherboard?

Yep - if you can offload the motherboard on second hand market like Marketplace or ebay for a reasonable value - it comes out to be pretty good and usually a straight swap if you can snipe a good deal on an itx board.

RAM prices are coming down slowly. Hopefully this bundle price comes down or includes a 32GB in future.
