If you make it from scratch, you're not consuming all the garbage ingredients (food-like substances) these mixes have (decades ago, they weren't as bad, but they're far worse in terms of garbage ingredients these days).
There are some great recipes you can find online for carrot cake - you can find easier, or more complicated versions; find one with the ingredients you like. Just look for one with a decent number of people rating it highly. Many online recipes have a "jump to recipe" button near the top, so you can skip all the text (and ads).
Carrot cake is much better with grated carrots rather than the artificial tiny bits they put in these mixes. Plus you can add crushed pineapple, a bit of cardamom (add 1/8 to 1/4 tsp to any recipe; you buy a small amount (tablespoon) at a natural food coop), a little bit of brandy, walnuts. So much better.
Cream cheese frosting is easy to make, too; don't buy the garbage sold in containers in the store.
