I haven't tried this flavor since they don't have it at my grocery stores, but the Mexican rice flavor works great for making taco casserole. You just mix in a jar of salsa and some broth. Top it with taco meat and cheese. Then some queso dip on top and bake. Serve with tortilla chips or tostada shells. Easy weekday dinner.

This is definitely one of my favorites Knorr rice sides. It is lighter tasting sauce to me than their other flavors and that is a good thing depending on my entree. It reminds me of the Chipotle cilantro lime rice in their burrito but not quite on that quality level. If I were to make chicken burrito at home, I could use this as the rice.
