Note that it is 6" and not the more common 8" chef knife size.

Not sure if you are referring to the offset bevel that some traditional sushi knives have, but the Fujitora knife that is linked has an even bevel and would sharpen normally. You may be referring to Japanese knives often using harder steels ( R2, White #1 etc.), but this is a VG-10. Yes it will be a little harder to sharpen vs. some of the German steels, but it will also take a sharper edge an retain it for longer, so could be considered a wash in time vs. effort.

No, not the offset bevel (that is another topic). The much harder steel and, of course, the different angle. Big fan of Tojiro products, own several, including one of their less-common powdered-metal knives. Tojiro=great value and the Fujitora line is very similar. Wustof and Tojiro both have their place: Tojiro, much sharper; Wustof, more robust.
