Performance won't be, but things like the UI not scaling well with a modern resolution, possible Windows compatibility mode tweaks, etc. may be needed. All standard kind of stuff for older games. Typically there are mods that fix most everything. If I remember, I think I did have to add a mod to KOTOR to get the UI to look right on my setup - well worth it in my opinion.
EDIT: A lot of them will work out of the box, others might need some minor tweaks/mods. I know Empire at War and Battlefront II works without any messing around. Highly recommend the mods for Empire at War.
This sale is strongest for classic Star Wars PC games, especially Republic Commando, Empire at War, and the older flight sims. Republic Commando at $2.49 is called a steal, with short but excellent squad combat. Empire at War runs well out of the box on Steam and gets a big boost from mods like AOTR and Expanding Fronts. Older titles can need UI scaling or compatibility tweaks, and X Wing and TIE Fighter may feel dated without controller support, but the right mods and low unit counts keep these picks playable.
PC players willing to use mods or compatibility tweaks, because older Star Wars games may need UI scaling fixes, Windows compatibility mode, or workshop mods.
Players who want a plug-and-play experience on modern PCs, because older Star Wars games may need UI scaling fixes, compatibility mode tweaks, or mods.
The classic Dark Forces version was reportedly delisted from Steam and GOG, making the remaster comparatively expensive versus the classic price history.
Older-game issues can include UI scaling problems at modern resolutions and occasional Windows compatibility tweaks. KOTOR may need a UI-fix mod on some setups, while Empire at War and Battlefront II reportedly run without much messing around.
Republic Commando at $2.49 is a strong buy for a short but very good Star Wars shooter. Its squad mechanics are still considered better than some modern games.
The Steam version is easier for modding because it supports Steam Workshop, while the GOG version is harder to get mods working on. AOTR is specifically recommended if you want to mod Empire at War.
The remaster project does not require the original game, but it does require X-Wing Alliance. Picking up X-Wing Alliance is the practical way to prepare for it.
It's really too bad that Disney delisted the classic original version of dark forces from steam and GOG a couple of weeks ago... The original was much cheaper than this remaster. Don't get me wrong, I love the remaster and NightDive did a great job (as they do with all of their remasters) but the price is a bit steep compared to the classic version which I've never seen cost more than $6.99, and it would often dip down to $2.99 territory.
Dark Forces is on Loaded for $2.70 right now. I didn't need the game but for that price I'll take it.
I feel like as the years have passed X-Wing and (especially) TIE Fighter have gotten a bit lost. In the late 90s TIE Fighter was widely considered one of the best games ever made - Star Wars or generally. If you're a Star Wars fan it's worth a look. There's also a remaster project which doesn't require the original game but does require X-Wing Alliance so you might want to just pick that up.

I'm a modding noob. Can you recommend where to get mods for empire at war?

I've only played the Steam version, where you just use the Steam workshop. It seems like the GOG version is harder to get mods for.If you really wanted to run mods for EaW (I recommend it), I would suggest getting the Steam version from some place like Loaded, or a Steam sale, and use the Steam Workshop. I especially recommend the mod AOTR.I hadn't realized it was different on GOG.

Part of it is the flight simulator games have really fallen out of mainstream. Not many people are willing to sit around and learn the control hot keys for a new game--especially ones without controller input.
It's too bad though--those used to be my favorite games.

Shadow of the Empire was one of my favorite games growing up as well.
