Better to get certified refurb from KitchenAid direct store on eBay which includes 2 years of free warranty. It's $249 and just a few days back, with some eBay promo, it got closer to $200. I will wait for that promo to come back.

Remember that the tilt ones fit in normal counter to cabinet heights whereas these bowl-lift ones have to be stored in dedicated spots. PITA.

I don't know what kind of cabinet setup you have but my 6qt lift bowl has fit under every cabinet in the last 3 places I lived.

I want to like KitchenAid mixers, but I haven't cracked the code making pizza or bread dough with it. I'm sure it's me, but mine tends to ride up the hook or just not come out right. I'm looking for pizza dough like pizza shops make that doesn't tear and I never seem to develop the gluten or something. I've used caputo flour and tried a lot of things. It could be a lot of things, but these dough mixing/fermenting machines that knead and proof for around $100 have piqued my interest https://www.amazon.com/Electric-F...B0B9HDLNHJ They supposedly make great bread/pizza dough and are easier to use since the top is wide open allowing you to add ingredients very easily and you can proof the dough in the bowl (less to clean up).

I know what to buy to really get there, a $800 Ooni or if I'm really serious a Revo Bake Titan Tilt https://revobake.com/ Problem is, I can't bring myself to fork over $1200...yet. There are cheaper spiral dough kneading machines for around $550 https://www.amazon.com/gp/product...B41DTB4EJU but even that's a little pricey. It's important to me that the bowl is removable too. The cheap spiral machine I just mentioned "does" have a removable bowl but most of these don't.

I'm probably going to give a Joydeem a shot. It's a hundred bucks. If that don't work out I'll spend the money on a proper spiral dough kneading mixer.

Time is your friend. It's not the dough hook. Make the dough the day before and overnight ferment in the fridge in a proof box. Also I tend to make my dough slightly wetter than you feel it should be. I love my Ooni. Natural gas hookup on the house makes it so easy. This is pretty much my basic method and recipie. https://youtu.be/g3CXC8DX4UU?si=DqlY7AIGigtamQcx
Only difference is I use the mixer and do a rest in the bowl, then turn it on again. Final rest is in proof box in the fridge.

I know it's me, but I've always rested my dough in the fridge at least overnight. It must be the hydration level or something, that and I'm kneading challenged. I'm still going to get one of those fancy spiral dough mixers someday, because there has to be a reason they're used commercially. Anyway, my rant was more about I'm not impressed by KA's dough mixing, especially when dough rides up the hook.

Kitchenaid doesn't want you mixing dough for more than 3 minutes at a time and six minutes total to avoid "straining the motor."You'd think a machine marketed as a primary baking machine would be able to stand up to more than six minutes of mixing.

Agreed, I was unimpressed with that. I'm going to give the Joydeem a shot. It's a frequently returned item, but enough people on the internet claim it makes great Neapolitan style pizza dough. That's all I want. https://www.amazon.com/Electric-F...B0B9HDLNHJ

Well I pulled the trigger on the Joydeem 7.4 Qt even though it's a frequently returned item. There are enough positive reviews that I'm willing to take a chance. This particular brand seems to be the most popular of its type. Also, I love the concept mixing, kneading, and fermenting all in the same pot. If it doesn't work out I'm buying a spiral dough mixer like I previously mentioned. There are commercial units for around $470 delivered, but I'll start with the $120 Joydeem 🫣 , it would be incredible if it actually works out for pizza dough.

Only the tilt head fits under my cabinets, but I know for a fact my cabinets are closer to the counter than standard height. Bowl life should fit if the cabinet height is standard.

What attachments does the one from eBay come with? Are they metal (stainless steel) or something with a coating?

I am also looking at the one at Costco with six attachments, currently on sale for $320. However, there are significant reviews complaining about the build quality. In particular, several reviews state that attachments have a coating that chips away over time.
