having stated that the M1 Pro has fans and sustains its performance indefinitely.
M5 throttles after about 30 minutes when connected to external monitor streaming 1080p videos + office work.

512 is a downgrade for me.
If I need to use newer apps, there's a Lenovo LCQ gaming machine with Mac emulation sitting next to it.
FWIW it's still running perfectly today, using today's software. Handles everything I throw at it. I currently have about 7 docker containers running, Firefox/Chrome both with a ton of tabs, a couple of claude/codex sessions, video streaming, and a second monitor hooked up.
I wanted to the upgrade to the M5 Macbook Air, since this Macbook Pro is so heavy and I was tired of carrying it, but I was messing with the 16" Air in the Apple store and it didn't feel much lighter, so I didn't go for the upgrade. I was hoping to get at least $1000 for it when I finally sold it, but it looks like the price has gone below that 🥲
but just as a 1 off experience its not that drastic.
if your good with the pro, stick with pro and never go air. If you get an air and use it a lot, going back to a pro feels like going backwards and downgrading.
FWIW the macbook pro 16" intel 2019 was lighter than this current M generation by ~+5oz. It was also smaller in all dimensions except width. the 2018 was 6oz lighter and even smaller footprint.
Ive said it many times that this current genration design is a thiccc boi. literally got bigger and gained weight.
Apple's official battery numbers for the Neo is up to 11 hours wireless web / 16 hours video streaming, while the MBP is up to 15 hours wireless web / 18 hours video playback.
Even an M1 Macbook Pro at 80% battery health is roughly 12 hours with my unscientific calculations. It's not exact, but that's the ballpark but that's superior than a Neo with 100 percent battery health. The 2021 Macbook Pro has a way larger capacity battery than a Neo.
M1 Pro supports 2 external displays; Neo only supports one. M1 Pro has a stronger GPU and multi-core performance, higher Memory Bandwidth, you get thunderbolt 4/USB 4 ports and magsafe with the M1 Pro, M1 Pro has 3 Thunderbolt 4 ports. Neo only has 1 USB 2.0 and 1 USB 3.0 port.
You get the same user experience as all the other M-series 14" and 16" Macbook Pros as they're all the same chassis and display for the most part; the only difference is the chip. Plus ram/storage is the real bottleneck for "future-proofing"; not the number of the M-chip or planned obsolescence by Apple's OS updates.
Plus they will still be worth something come 2031 as Linux enthusiasts will be buying them to run Asahi Linux (Similar Arc to Lenovo Thinkpads); you won't be able to say the same thing about Macbook Airs as almost all of the ones on the used market only have 8GB of ram.
Neo is only $500 from Apple Education site and some people would say "Oh but you get a warranty". I'd argue the warranty angle is mostly irrelevant here. These devices are extremely reliable, far more so than any traditional x86/x64 laptop, thanks to the tightly integrated ARM SoC design and macOS optimizations. You're not likely to see failures that make a multi-year warranty meaningful in the same way as older PCs. Heat is the number 1 enemy of electronics/laptops and the ARM nature of these machines that produce very little heat means they are incredibly reliable. The Apple Silicon Macbooks have more in common with the phone in your pocket than any x86/x64 laptop.
Even if the machine craps out on in the 0.01 chance it does; you can recoup most of your money back on eBay because the display panels are so insanely expensive for these machines.
