Its certainly possible that this is how it is now or post-pandemic etc, I am not saying you are wrong. I do want to add that I worked at Applebees for about 10 years around 2004-2014 or so, and during that time, they cooked most of the things you would think any normal mid-range casual dining chain restaurant would cook. Certainly they had and used microwaves for some items but not all that many, and the majority of the popular items were grilled on an actual grill, cooked on a flat top, or fried. This included all the steaks, burgers, grilled shrimp, and chicken items, and the adult pasta was boiled in a pot of water on a stove. Fries, wings, fried shrimp, and chicken fingers were fried. The main popular things that were microwaved were kids mac and cheese and kids hot dog, and the mashed potatoes and mixed vegetables were microwaved to warm up but were previously cooked/mashed in the store earlier in the day and refrigerated.

I suppose the upside is that's it's only gone up a dollar in two years.

If you're thinking about trying this out for the chicken... don't.
It's seriously bad. An insult to bar food. You'd be better off buying a bag of frozen chicken breast bites and cooking them at home.

my local Applebee's has a strange smell they cannot local the origin so it's pretty gross dining in there, probably a dead body hidden in the ceiling

Pretty sure wholesale shrimp is less than $5 per pound, so you'll need to eat more than 3lbs of shrimp to get your money's worth lol

For the variety here, I'd say this is better than an overpriced McD combo meal
