The ultra has line level outs and digital outs..... they are two very different products. You buy the ultra if you want to use it with your (presumably) high end amplifier. You buy this amp if you want an all in one unit and it cannot easily be used as just a streamer with another amp. There are two exceptions, you could use it to output bluetooth which people dont like or I have confirmed it works with mine, that you can use audio out over USB if you have another DAC/AMP that takes USB audio input.

I do wish this amp had line level outs or digital out, it would be nice to switch it to just streamer mode if you later wanted to upgrade to a better amp.

I have 8 ceiling speakers (6 speakers in one room and 2 speakers in another room). Can you please recommend what I can use to power them, and where I can stream via Bluetooth, AirPlay, or Google Cast.

There's a variety of options. I have 4 WiiM Pros that go to a multiroom amp I got off Ebay, which gives me control of 4 independent rooms, absolutely love the setup. You need as many WiiMs as you want different audio streams. If all the speakers will always be on with the same source, you can use just one. If you want the most straightforward setup, you could just get these with the built-in amp, but you likely won't be able to drive more than 4 speakers per unit (technically depending on the impedance of the speakers)
