5070 12gb is roughly ~30-40% better than 5060 ti 8 gb
While the prebuilt will save you money if you buy parts at market price, you could also wait for the frequent sales on each individual part that has been cropping up lately.
Also, this prebuilt's gpu is only a 5060 Ti 8GB GDDR7, not 5060 Ti 16GB GDDR7 as previous comments suggest.

Because the processor has an AI specific NPU chip that handles localized AI and machine learning functions and offloads that function from the main CPU chip?
As others on Woot pointed out, apparently this machine runs on a Legion motherboard and a 500W 88% power supply, and would surely bottleneck any AI/ML work.
The 5060 Ti 8GB GDDR7 and the Intel Core Ultra 7 265F both use up to 180W individually.
