Love Korean style noodles because they're thicker and cheaper BUT I have yet to find one that's not HOT. And I've eaten over 30 brands of Asian ramen. Even a Korean ramen labeled "mild" was judged to be "hot like jalapeno" by a ramen review site. Actually, I have found a few that's not hot. BUT they're too freaking sickeningly sweet, e.g. jajangmyeon. Don't the Koreans know any flavors besides hot and sweet??? Anyway, I usually buy Korean ramen then use the flavor packets from Chinese and Japanese brands.

Use half (or less) of the packet. Less sodium, too.
Shin=spicy, they even market Shin as Spicy Happiness In Noodles.
Alexa recommends their Tonkotsu, Neoguri Udon-style and Toomba as less spicy flavors. But just use less packet.

I use half too. Some people think using half of a packet is gonna make the soup less flavorful, but that's not true if you factor in the water level.
