I like the idea of the separate tank, but when I've bought a nugget ice machine at $99 before it's kind of hard to spend double. I'm tempted though...

We had one even bigger than this one. We probably use 2 gallons a day.We bought this one and a 3 year warranty. I've never bought a warranty before, but they seem to break pretty fast...

most nugget icemakers have an auger design that eventually wear downs the gears and your machine breaks down. 3 year warranty sounds about right. Most break between 1-3 years imho.
The bullet ones also have a few moving parts that can break down over time.
I had an opal go bad after almost 2 years.
I have an iceman from Amazon, it's going strong over a year and a half but can hear the auger grinding a bit so I think it's going to break down in the next 6 months.

After my first one broke at around year two I replaced it and opted for an extended warranty. That had good and bad aspects. The good was that I was right and I'd need it again at about the 18 month mark. The bad was that it was from some Amazon provided company that simply refused to even acknowledge my existence, ever. At least it was cheap.

So as the ice melts the water just pools around the remaining ice? The removable tank sounds nice but that seems like really bad design.

It drains away into a tank and is either cycled back into freeze chamber or emptied when you decide to drain unused water from the machine - which is something to always do when not in use.
