Often folks just use the fresh tip for their first solder job and solder only touches a blob of the tip. They finish and turn off the iron. After only 2-3 times of doing this, you'll see that small blob area is now the only area that only works on the whole tip. Solder doesn't flow worth a damn when you touch it to anywhere else on the tip. Seasoning the tip forces the entire tip to "engage".
Once you do it, you'll understand.

I got another really cheap temp control iron, and it works great and is nice and portable unlike my Hakko station, which is also great, but not small. Also, my the cheap iron has small tips, which is great for tiny SMT soldering.
