If it's an option for you, No Man's Sky is an awful lot of fun in VR.
Motion sickness forced me to take it slowly since it was one of the first VR games I played, but it was worth the practice and build-up.
That's a great idea! I only played it on PC like normal. Although I personally couldn't get into it, but I bet VR would make it much more immersive. What system did you use for VR?

I played on PS5 with a PSVR2 headset. Could only play for 10 or so minutes initially before starting to get a little nauseated but, by forcing myself to stop before actually getting queasy and then coming back to it a couple hours later, I built up an 'immunization,' of sorts, after a few days.
At least on the PlayStation version, there was an option to do snap/90 degree turns instead of normal movement, and to do a short teleport-like jump, too, to reduce motion sickness. After I got used to playing for an hour or so without feeling queasy, I switched over to the normal smooth turning/walking movement controls, and then never went back.
I'd assume/hope the same options are available in the PC version - they were super helpful for anyone who, like me, doesn't have much of any experience with VR and needs to ease in slowly.
