The Instant Pot Pro 8 quart stands out as a versatile countertop cooker for pressure cooking, sous vide, yogurt, and everyday batch meals. The temperature control and sous vide mode get especially strong praise for yogurt, shrimp, and other staples like beans, soups, sweet potatoes, and boiled peanuts. Its set it and forget it convenience also replaces stove top pressure cookers for some kitchens. The main drawback is that it needs counter space and can be easy to forget once stored away. A practical pick if you want one appliance to handle a wide range of cooking tasks.

  • The Instant Pot Pro's sous vide temperature control supports regular yogurt and shrimp cooking.

  • The Instant Pot Pro's convenience can replace stove-top pressure cooking without constant monitoring.

  • The Instant Pot Pro can handle sous vide use cases for people replacing a rice cooker.

  • The Instant Pot ecosystem can produce homemade yogurt and other everyday meals using multiple sizes.

  • The Instant Pot can require keeping it on the counter, which may lead to forgetting it exists.

  • The auto-pressure release behavior at normal high pressure can be appealing, but it may not match expectations if a discontinued max model is preferred.

  • The 6-qt model pricing can be close to the 8-qt Pro, which may reduce the value of paying extra for capacity.

I have two stove top pressure cookers that I haven't used in years since the instapot, even though the stove top ones use a higher pressure. The convenience of not having to monitor it is nice.
the max is supposed to also go up to 15psi

Must resist... I already have 5 IPs (one 8qt, three 6qt, one 3qt). They are awesome. I primarily use them for homemade yogurt (https://www.glueandglitter.com/so...stant-pot/), a personal whole-grain mix, sweet potatoes, beans, corn, various soups, etc.

Yes, but, sadly, I think the max has been discontinued. It's the one I use most (at normal high pressure of 11-12psi). I greatly enjoy the auto-pressure release as programmed.

Got the 6qt option. Like the smaller footprint. Thanks.
