And I actually like it a lot more than 2 since I'm an OG trilogy fan. The presentation and Walker Assault are just so fun even now.

Admittedly, the original FF7 means a lot to me, so I feel I'm predisposed to enjoy the Remake project (especially when the story deviates; I'm 100% on board for things to get weird).
That said, and like you said, there's a *ton* of content. Personally, I completed everything possible in each zone as I went through the game and loved every second of it, but I've read a lot of complaints online from people who thought there was too much 'bloat,' too much Ubisoft-style map stuff to clear, etc., and they burned out before finishing.
My unsolicited advice is, even if you're a completionist, don't be afraid to skip some stuff to keep the story moving if you start feeling antsy. No spoilers, but there's a very clear point of no return later on, and you'll have ample opportunity to go back and finish anything and everything you want.
Wish I could wipe my memories of playing *Rebirth* and go through it again fresh. Cannot freakin' wait for the finale next year!
