Price is similar, is there any benefit to buying on steam vs gog?
Mix of personal preferance and DRM vs no DRM. GOG doesn't have DRM on their games, however I've been on the Steam ecosystem for many years and prefer buying games on their platform, especially since I have a Steam Deck.

Do you know if there's a meaningful difference in the way either platform handles cloud saves?

Someone else might be able to provide a better answer than I could but if my memory serves correctly, on Steam its based on how the developers set it up while GOG its based on them handling the cloud save. The downside for GOG's cloud save is that it has a 200MB limit per title.
Steam depends on game & dev....Most are under 1gb but V Rising saying the limit is 93.13gb lmao so I guess there is no limit and probably the devs have to pay for the size otherwise they all would use crazy amount unnecessarily.
Repost but hopefully helps someone here too!

Literally just checked steamdb for the price on this less than 24 hours ago and saw it was due for another sale soon. Was pleasantly surprised to see this post so quickly thereafter! Instantly snagged this and can't wait to dive in.
