Plastic gouges as you use it, trapping food particles and creating bacteria breeding grounds. Polyvinyl acetate doesn't so this, it's a rubber like material and used in pretty much every single sushi restaurant in existence.
End grain hardwood boards
Preferably walnut or maple, slightly safer than edge grain due to better capillary action but you're gonna pay a premium for them.
Anything else is either going to be terrible for your knife edge or like plastic harbor bacteria.
