Bamboo is really hard on knives. Keep a honing steel around and you should be fine unless you're banging on these every day.

Yes. Bamboo is naturally high in silica, which will quickly dull your knives. Bamboo is cheap, but bad material for cutting boards.

What's a good inexpensive alternative to convert away from our plastic boards?

https://youtu.be/yqsW4O8Ejmw Alton did a video on everything knives and cutting boards. Mentions two types of cutting boards he likes. Neither bamboo because they dull your knives.

Here was the guidance from that video.
Materials to Avoid:
Alton strongly advises against using boards made of titanium, glass, or marble, as they are extremely damaging to knife edges. He also warns against bamboo boards, noting that their high silica content and the heavy amount of glue used in their construction make them poor choices for maintaining a sharp blade.
Recommended Materials:
  1. Wood: A high-quality wooden board (at least 1.5 inches thick) is a classic choice.
    • Edge Grain: The grain runs horizontally; it's durable and effective.
    • End Grain: The grain runs vertically. These are preferred for their "self-healing" properties and because they allow a knife to glide across the surface smoothly. Wood boards require monthly maintenance with food-grade mineral oil or beeswax board cream to prevent cracking (8:06).
  2. PVA (Polyvinyl Acetate): If you prefer not to maintain wood, consider synthetic rubber boards like those from the company Hi-Soft. These are durable, provide a soft surface that protects knife edges, and are common in professional sushi bars

This deal is perfect for people who love their cutting boards more than their knives.

There's generally a trade-off between not dulling your knives and ease of maintenance. Then you throw in affordability and it gets tricky to find something that will check all three boxes.
I believe maple cutting boards are generally considered great material, but it'll be a lot more expensive than bamboo. Acacia might be a good middle ground where you can find it cheaper than maple, but not nearly as bad as bamboo.

Thanks, I was just wondering if end-grain bamboo might be easier on knives, but maybe not by a lot if the high glue content is a factor...
