Here was the guidance from that video.
Materials to Avoid:
Alton strongly advises against using boards made of titanium, glass, or marble, as they are extremely damaging to knife edges. He also warns against bamboo boards, noting that their high silica content and the heavy amount of glue used in their construction make them poor choices for maintaining a sharp blade.
Recommended Materials:
  1. Wood: A high-quality wooden board (at least 1.5 inches thick) is a classic choice.
    • Edge Grain: The grain runs horizontally; it's durable and effective.
    • End Grain: The grain runs vertically. These are preferred for their "self-healing" properties and because they allow a knife to glide across the surface smoothly. Wood boards require monthly maintenance with food-grade mineral oil or beeswax board cream to prevent cracking (8:06).
  2. PVA (Polyvinyl Acetate): If you prefer not to maintain wood, consider synthetic rubber boards like those from the company Hi-Soft. These are durable, provide a soft surface that protects knife edges, and are common in professional sushi bars
