This is echoing what you are saying. These CPUs might not provide the best performance per dollar. But they are absolutely in a different league than normal Ryzen CPUs. It's like going from normal automobiles to things like construction equipment. They aren't ideal for most people. But for certain use cases, they enable an entirely different way of working.

I'm an IT consultant by trade, currently working for a health research institute, and I've built a couple of threadripper machines (not so much threadripper pro) for situations where researchers have needed vastly enhanced memory bandwidth (for huge bioinformatics stat crunching), and also I built out one or two AI training workstations for kinesiologists wanting to train ai models for stuff like gate analysis, swing analysis, and other purposes that require precise real-time skeletal measurements, etc. and they wanted a box with 4x 2080ti's (which were the latest at the time I built the box).
one of the problems with modern commodity cpus is that they SUUUCK at pcie lanes. you basically have enough to drive a gpu and one or two m.2 ssd's and that's pretty much it. if you populate the second pcie slot on the overwhelming majority of platforms, it takes 8 lanes away from the top pcie slot and allows the second slot to use them (x8/x8), and the third pcie slot is typically shared by the second m.2 slot (the first one goes directly to the cpu), and on boards that have a third m.2 slot, that's typically shared with the chipset lanes for onboard devices (usb, thunderbolt, audio, onboard networking, etc. which can slow things down quite a bit). my biggest wish for next generation cpu platforms is that they double the number of pcie lanes so people can use like a REAL pcie network card (to upgrade to 10g or 100g or 200g networking without taking away 8 lanes from the gpu), or heaven forbid you want to drop in another 2-4 m.2 drives or you want to use a pcie based quad hdmi video capture board which are quite common for video studios doing live-to-tape or some higher end streaming setups.
