I ordered one but decided to cancel it. I am trying to avoid using non-stick coating pans due to health concern. I am looking for a real carbon steel pan/wok that takes a little more maintenance but no worry of the chemical getting into my food.

I agree about the non stick coating. But what made you think the pan from this deal, the FGJ 13" work has a nonstick coating?

The website only has the same info - all the mentions of nonstick just seems to be the factory finish. All the metals listed above are just the recipe for modern carbon steel as far as I can tell.

All the PTFE coatings I've seen have come with many more warnings, especially temperature warnings. It certainly doesn't feel like any teflon or similar coatings I've encountered on previous nonstick I've encountered at least. Just seems a smooth metal finish. Looking real close, the splotchyness and matte nature is just the metal with the extra carbon melded in, not any coating at least.

Sometimes 'normal' stuff can be more high-quality than you expect.
it literally shows on the picture "carbon steel body with nonstick interior" it absolutely is PTFE and should not be used for high heat cooking

I agree and the handle is even removable but I'd rather a full carbon steel from a restaurant supply shop without the wood.
