A gas burner is basically just taking your kitchen stove outside. It gets the job done, but it doesn't bring the flavor, aroma, or experience that cooking over charcoal does. Charcoal adds a depth and character to the food that gas simply can't replicate.

How do you add depth and character from the charcoal if you're cooking in a pan?

Done that and more with my fire pit in the backyard. Cinderblocks and a metal grate. Sticks, charcoal, logs. Have humored the idea of rigging up a fireplace propane burner for the lazy days with rain. I want a vented roof for it as well though.
