As much as I prefer PC to console, the FFVII remakes are pretty poor ports. I bought the first of them on PC and it had a ton of microstutter. If it's an option for you, buy it on disc for the PS5.

If you buy the Steam version, you basically own it forever. Steam's business model is providing a storefront for digital PC games. Your library is pretty safe, as long as you're not doing shady stuff to acquire games, cheating in online games, or making a total arse of yourself.
PS5 disc-version, you only own so long as you have a PS5 and PS5 disc-reader that will play it, and the disc remains in playable condition. Sony just announced they're discontinuing the disc drive. So that's not really a good long-term solution. PS5 Digital is fine, unless Sony decides to erase your account for inactivity.
I tend to only buy the PS exclusives for PS3 or PS5, and then only when they're on sale. I guess if a game is on sale cheap enough, it's fine there.
Long-term ownership, Steam is much better.
