Carbon steel with nonstick coating: the coating will wear off(into your food) and the carbon steel will rust.

I'd recommend spending a bit more to get aluminum or stainless steel sheet pans and racks. You really don't need a non-stick coating on a rack, and you can just throw it in the dishwasher to clean it.

For a sheet pan you can just use parchment paper to prevent sticking and make cleanup literally effortless(toss the paper, done).

Carbon steel with nonstick coating: the coating will wear off(into your food) and the carbon steel will rust.

I'd recommend spending a bit more to get aluminum or stainless steel sheet pans and racks. You really don't need a non-stick coating on a rack, and you can just throw it in the dishwasher to clean it.
