This process, published in the Journal of Food Engineering, uses acoustic cavitation to extract flavors and oils, achieving chemical and sensory profiles comparable to traditional espresso while consuming 75% less energy.
Key details of the ultrasonic brewing technique include:
- Mechanism: A transducer attached to the espresso basket generates high-frequency sound waves that create microscopic bubbles. The collapse of these bubbles (cavitation) mechanically fractures coffee grounds, accelerating extraction without heat.
- Efficiency: The system uses only 24% of the energy required by a conventional espresso machine, as it avoids the energy-intensive process of heating large volumes of water.
- Sensory Results: In blind taste tests with 100 coffee drinkers, participants could not reliably distinguish the ultrasonic espresso from traditional hot espresso in terms of aroma, flavor, bitterness, and overall liking.
- Versatility: The same technology can also reduce cold brew production time from 12–24 hours to under 3 minutes, with consumers even preferring the ultrasonic filter coffee over conventional pour-over.
