My use case is watching my son freak out playing two hand Minecraft Bedrock.

Same. Don't need, but would be cool af just to have one in the home office - price is low enough to apologize less to the wife. Reviews not good tho.

FWIW, I have owned a 55", 1080P ELO PCAP touchscreen display for a couple years now and can say it's interesting when used as a whiteboard, but you do have to have a PC connected to it which increases cost, and you have to decide which note taking program works well for you (OneNote, Goodnotes, etc). That said, from my experience, unless you are using to give whiteboarded presentations in front of people that you also want to save digitally, it seems to be better to just sit at a desk with an iPad and Pencil and do your drawing/notes/etc that way.

If I weren't trying to lower the amount of stuff I have, I would buy this to make it into a touchscreen game table.
