What I want to know - everyone has mayo. A small container of Gojuchang can probably make you a 5 gallon bucket of this stuff mixed with mayo at a fraction of the cost and you can control the heat/flavor. So why mess with this?

Extra virgin olive oil is an excellent oil, and if a manufacturer used it instead, it would likely make the product significantly more expensive since EVOO costs considerably more than high-oleic sunflower oil. For an everyday mayonnaise-style sauce, high-oleic sunflower oil is a practical, stable, and nutritionally sound choice.
And compared with many similar products sold in the U.S., which are typically made with soybean oil, high-oleic sunflower oil is generally considered the better option because it contains significantly more heart-healthy monounsaturated fats and is more resistant to oxidation.
