Not all sunflower oil is the same. High-oleic sunflower oil is high in monounsaturated fats and is considered a healthy cooking oil. Since this is a mayonnaise-based sauce, it's expected that oil is the first ingredient, followed by egg yolks.

See, if the argument is this isn't authentic, I'd agree with you. But is someone buying Kensington Gojuchang sauce really looking for authenticity?

What I want to know - everyone has mayo. A small container of Gojuchang can probably make you a 5 gallon bucket of this stuff mixed with mayo at a fraction of the cost and you can control the heat/flavor. So why mess with this?

High oleic sunflower oil is a highly refined (aka, processed) fat that is stripped of all nutritional content through the manufacturing process to provide a "clean" fat that's all calories no nutrition. It might not kill you but it's worth understanding how it's derived. They chose it because it's easy to manufacture when they could've gone with Avocado oil

This is a sauce, not a frying oil. It's not intended for high-heat cooking, so concerns about oil oxidation during deep-frying aren't especially relevant here.
