Like all dome thermometers this measures dome temp. Your food is not sitting anywhere near the dome. It sits on the grate. If your dome thermometer is working, this adds nothing besides a digital display. You do not need accuracy there. Invest in a setup that monitors your grate over wifi and is accurate.

Is there a big difference? I'm assuming someone out there has done the testing on YouTube, but I've never seen it come up on videos I've watched, but I have seen them using the grates more often

Yes there is a considerable difference on most grills. I use two probes on my kamado on different parts of the grate to understand what is going on there.

It's very reasonably priced. It's 4.2 rating on Walmart out of 18 reviews with one saying it's too short to fit the Akorn grill. Kamado Joe owners need to consider the temperature limitation of a max of 660F. As I sear I bring it over 700F so I am not sure if this will damage the unit. I will open one this weekend then decide if I will keep the second one. I've the Cheftemp S1 and I like it but the battery is dead when I try to use it unless I charge ahead or use a portable battery pack. A pain to have a charging cable hanging in front of the grill.
