If you don't mind the industrial look, and are willing to stain/oil the top, it'll work great.

I have a countertop just like it mounted on a flexispot lifting frame for my desk.

edit: 31" may be high depending on fitment. I just measured my desk at 29"

It's probably 24" deep vs typical desks at 30".
