Commercial kitchens have an obvious different level of risk. You have a large number of people in close quarters doing a whole bunch of things all at once while dealing with a fast-paced, high-pressure environment where accidents are more likely to happen and broken glass on the line could disrupt an entire dinner service costing the restaurant thousands,if not tens of thousands, of dollars.
Average Joe Slickdealer doesn't face these same risk. It's one or two people cooking in a casual environment making a handful of dishes at a time. And if the lid breaks, they toss out dinner and order DoorDash.
The risks and the consequences are completely different.
