I think US Mobile is the best carrier I've found as far as customer service goes.
I have a iPhone 15 and S24. They both do it. The iphone actually supports around 8 ESIMs but only two can be active at a time. I'm sure the Samsungs are similar.
I watch a lot of YouTube videos for reference.
That's only if your backup phone supports e-sim. I just use an old Samsung S10 as a backup.

Customer service has been great in my experience every time I've needed it.
The CEO posts to Reddit and the staff are reachable there too. They've had some crazy deals on Pixel phones.
Coverage will entirely depend on your towers. For me, Verizon is consistently reliable. For me, T-Mobile was incredibly fast at my house, but deprioritized when I work in the city, which means I'd have 5 bars but still very low speeds. I didn't try AT&T because they run an outdated slower network in my area, but it would still provide good coverage if I needed it. So Verizon on US Mobile is the happy medium of speed and coverage everywhere I go.
I set it and never think about it again.
For you, it might be different. So you either have to play with the different carriers, or maybe you live in an area where all three are already good.
For me, the mobile app experience, the Verizon coverage being the same as postpaid VZW, and the low prices make it worth it.
