I don't know what makes this creole but I do know that the process makes all the difference.

Add the same mustard powder to warm and cold water. One will be spicy and the other will have no flavor at all.

Good question. You are correct, the ingredients give no indication.

Keep in mind, Zatarans needs to distinguish themselves from other mustards if they're going to sell mustard.

This basically looks like a product known as "whole grain" mustard.

The stone ground brown mustard seed in the mix 'loosely' allows them to call it creole because of the flavor it produces (versus common yellow mustard and other mustards).
Tho certain ingredients like the stone ground brown mustard seed are used in creole dishes that contain mustard, however just because an ingredient is common to creole style foods and cooking, does not mean it is always exclusive to only creole foods.

On a sidenote, creole and cajun are not the same thing and are considerably different from each other.

Last time it had a kick and I loved it. I brought it in our restaurant as our spicy mustard. It's been a few years but I think most people will like it if they like spicy mustard. Like all mustard, it loses it's kick after being opened for an extended period. That shouldn't be a problem for 12 ounces.

As a cajun. This is just spicy mustard. Nothing special. Nothing "New Orleans" about it. If they price is right buy it though.

We don't buy this type of mustard down here, around new orleans and bayou country, anyways. More of a marketing gimmick.

Cajuns/New Orleans mostly buy French's yellow mustard and great value stone ground mustard then we season to taste.
