Am I stupid for wanting/thinking this would be easier? Would 2 of these be enough? Would I need 4 instead? Realistically the amount of juice being pulled is just the lights and TV's running maybe 4-6s a day and over the weekends longer of course.

I bought two of these. I charge them outside with 2 or 3 175W panels, which takes 2-3 days in summer (per battery), but longer outside of summer months because of weather and length of the days. In winter, they have to be warmed up. Charging below freezing will damage the cells (you mentioned Ice House). One battery will power my computer for about 3 days (200-300W) for 6-8 hours using a pure sine inverter. Inverters themselves consume power just sitting at idle (maybe 30W?). So how much you need will depend upon your power draw and whether you leave it sitting idle when it's not in use. Add up the wattage of the things you want to run, multiply by hours of use. Each of these batteries stores about 3.5 kWH of energy, so divide your daily requirement (in kWH, so divide your watts x hours by 1000) into 3 (to allow for losses in the inverter) to get how many days one battery will last. The tricky part is figuring out how much wattage in solar panels you'll need to charge the batteries to keep uo with your consumption. I use a charge controller with Anderson connectors to charge mine because I physically take them outside to charge. You'll more likely want to rig up a system where you don't need to move them around, but make sure they don't go below freezing when charging. That's a long, rambling answer, but I think I hit the high points.
My solar cables failed after a few months every time. Thought I was doing something wrong..... smh.
They really need instructions on using/providing andersen connectors with these batteries..............
Andersen connectors allow you to connect and disconnect thousands of times (in theory)
I need more batteries but on the fence because of weight. My plastic 280AH is heavy enough. don't know if a metal case will put me over the edge (therefore I wasted $500 for no reason lol)
