One of the other forums I go to has one of these threads and I've been turned on to some good movies that other regulars just watched. I was kind of surprised not to see a similar thread here (at least not that I could find.) 
I just rewatched "Kinamand" - a cute drama about a Danish plumber who gets involved in an arranged marriage with a Chinese illegal. Good stuff (Netflix instant.)
So what have you folks watched recently?

The Adventures of Robin Hood (1938). This is of course a classic, but my favorite discovery that Alan Hale (Skipper from Gilligan's Island) played Little John. Olivia de Haviland looked amazing.
Back to the Future (1985). Always a blast, and the kiddos really enjoyed this one. We hope to watch 2 and 3 before too long.
Cheech & Chong's Next Movie (1980). This one starts off in very hilarious fashion, but quickly jumps off the rails when Cheech's "cousin" appears. Watch the first half-hour and then go do something fun, instead.
X-Men: First Class (2011). This wasn't quite the level of Iron Man or the recent Batman movies, but I definitely enjoyed it. I am assuming they are working on some follow-up movies to this.

That said, I'm not sure on what planet any anime is so mainstream as to be called something the entire video community has already watched, but I know I kinda wanna torture myself with this series... and I don't even like anime. Either that, or like "Curb Your Enthusiasm" I just enjoy the synopsis while I could never actually watch the show.
I think it's required, though: any series about an alien, supernatural being, or general nutcase who shows up and turns everybody's life upside-down _has_ to include a movie exploring what would happen if they disappeared and everybody except one or a couple of characters didn't even remember them ever being there.
Like "A Wonderful Life," except for the "Cute Hyperactive Sociopath" part. (Which I think James Stewart would *not* play well, no matter how much I like him as an actor, so I think they made the right choice in sticking with the crazy Japanese girl.)
Even at 162 minutes, it didn't seem long or slow, and it actually did show some new sides and background to the characters, which the series really hadn't. People were changed by their experiences, or even if they didn't change so much on the outside, we looked at them a little different than we did when the movie began.
So, if you watch the series, my advice is to skip over the second season (or at least the 2/3rds of it that are all the same episode) and then watch the movie. Since the movie is all about "what if Haruhi had never been there?" there's no point to watching the movie without having seen at least the first season beforehand.

Since you mentioned anime, and only because they are super-awesome, I am going to suggest Neon Genesis Evangelion and/or Full Metal Alchemist: Brotherhood.

I don't really keep up on the stuff either. There's just too much of it. And, contrary to some opinions, not all of it is good. haha. Every once in a while I'll start wondering if there's anything interesting to watch and will get on a kick for a bit.
FMA: note the "Brotherhood" series is a retelling of the first series. The first series was finishing before the comic was, so the TV show started making stuff up, and plot holes and things ensued. "Brotherhood" is basically the TV studio's admission that they screwed up so badly they should redo the entire series. (Probably made some more $ from it too, of course.)
I do think the first episode of the first series draws you in way more than the first episode of Brotherhood, though. Watch episode one of the first series and see if you're not hooked by the end.
Have no fear about Evangelion. It's a "giant robot" show that doesn't actually have giant robots. If you want human interaction, I don't think you'll be disappointed, though it's not necessarily nice human interaction, and if memory serves, it can be a bit slow. If you like happy endings... eh... I don't know if much of anything in Evangelion actually counts as happy. You'll wind up watching Evangelion eventually, but, honestly, it wouldn't be at the top of my list of things to watch before other, newer stuff.
Here's a couple lesser-knowns for you to look into off the top of my head:
Scrapped Princess. It's sort of a medieval, sci-fi, fantasy series. Very underrated imo. Usually anything with "princess" in the title pushes people away, but while it's not hardcore, it's not cutesy either. (Well, maybe sometimes.) The ending is rushed, but other than that, I think it's well done and entertaining. As always, ymmv on that. It's made by Studio Bones, which has a history of making quality stuff.
Spice and Wolf. Not too many series where a wolf god in the form of a human teams up with a traveling merchant and get involved in political squabbles while also teaching you economics along the way. No, really. It's one of those "this looks too cutesy and weird, but I'll watch one episode just to say I did," and then wind up watching them all and recommending them to others, like now.
