Over time, I've been replacing various plastic items for food storage and preparation with silicone ones. In 5 or so years, are we going to find out that the silicone was off-gassing or resulting in micro-silicone particles in our blood, organs, or brains? Any organic chemists or biochemists know whether we are just trading one problem for a different problem down the road?

Yes and no. Pure food grade silicone is expensive. It's chemically and thermally inert look for EU or FDA certifications The main risk is fillers not the silicone.Take this cut and paste to test"Home Verification Tests1. The Pinch & Twist Test (Immediate Indicator) Method: Pinch a flat section of the silicone product and twist it 180 degrees to stretch the surface taut. Pure Silicone: Retains its exact original color throughout the bend. Filled/Off-Brand: Turning white or showing pale stress lines indicates cheap plasticizers or mineral fillers (like calcium carbonate) mixed into the polymer matrix."

my wife got a few of these a few years ago and i hate them. They're a pain to wash and take forever to dry on the inside.

Yeah that's what I was afraid of. For inert things like ear buds or non food sure but how do you get it dry inside? It's like the 2L hydration bladder I got that is almost not worth it because cleaning it and drying it is such a pain
