Typical for sourdough, you preheat cast iron at 500F, bake at 450F and uncover bake at 425F. In the end, bread is bread so it will taste good when it is freshly baked regardless.

just use any pot. i use a 5qt stainless steel soup pot with metal lid. it's the steaming that's important.

400 degree limit kills it. My cloche gets ovens temps to 500 to start, then I drop it down to 450 to back 30 minutes and then to 400 for 10 minutes with the top off.
