Epson eco tank are maintenance and repair nightmare. If don't print for 2 weeks, you will need to unclog the print head. If you make mistake ink will leak on circuits, which will short circuit the sensor side, or the motherboard side. All parts are expensive to replace. There are unnecessary designs to make it difficult to repair because they want you to break it accidentally.

Are there any inkjets that don't clog if you don't use them consistently? My canon cartridge version needs constant unclogging if I don't use it.

Laserjets are the solution, if you want to set and forget, although upfront cost is higher.

If you don't print frequently on an inkjet, safest is probably to remove the cartridge, put tape over the contacts, and then just wipe it and put it back in when you're going to use it again.
