Where are the "valves"? I see one connection to the main tank and that's it?

This means internal valves. You can disconnect one side while the tank is still supplying gas to the other side.

I'm a new griddle owner, as of today. It just has a hanging hose connector and I am buying a tank

I think tanks sold at Costco one time had a little gauge, but not sure how well those work. My Weber has a spring loaded hook which shows how much LPG the tank has. It's just better to have two tanks. I bought two from a yard sale for $5/each and they've been fine. When I did run out, it was about 2 minutes to replace and I was back to cooking. My blackstone held the heat just fine and my food turned out great.

Great idea. My gauge that was hooked on the OP Y would leak. What's the cheapest place to buy a spare these days?

The "valves" are inside the Y — internal check valves so you can disconnect one side while the other is still drawing.If you only keep a single 20lb around for two burners its basically a no-brainer at $15, just hand-tighten the nut at the tank and confirm the o-ring is seated before you crack it open.
